Lunch in a Mason Jar

My Version of the Grilled Market Salad
(Prep Time 15 minutes)

Salad Recipe
1 quart mason jar
4 TBSP Homemade AC Vinaigrette
1/2 Green Apple Cut in thirds
4 Strawberries quartered
1/2 cup Blueberries
2 Handfuls Romaine
1 TBSP Pecans
1 tsp blue cheese (optional)


Apple Cider Vinaigrette Dressing Recipe

Makes 1 cup or 16 TBSP
(Prep time 5 minutes)

1/4 cup raw apple cider vinegar ( I probably use 1/2 cup)
1-2 tablespoons raw honey, as needed for sweetness
3/4 cup extra-virgin olive oil
1 tsp fresh black pepper or to taste & a dash of salt (I left the salt out)
Blend or shake well and store in airtight container in the fridge

And Viola!




Here is week 1 Review:

It stayed crisp and fresh all week long. I didn't have to worry about running out for lunch, spending cash or going off track. This definitely made my week less hectic now that my son is in school and we commute in the morning. Just mix it up with different flavors and salads and you have yourself a WIN - WIN - WIN!
